 Post subject: Chicken Casserole

Ingredients:

5 - boneless skinless chicken breasts (half breast)
1 - can of mushroom soup
1 - can of Cream of Chicken Soup
10-11oz Dressing (i.e. Pepperidge farm herb seasoned..cube in a bag is my preference)
1 & 1/3 stick of margarine
optional(but recommended)
10oz of frozen veggies (that frozen brick of mixed veggies works well)

Prep:
Put enough water in a pot to cover chicken breasts and bring to a boil.
Skim foam and lower to medium heat, cook chicken 20 minutes or until chicken is white all through
Remove cooked Chicken and let cool...cube chicken (DO NOT discard broth as this is used for soup.)
In a large mixing bowl, mix dressing with melted margarine thoroughly

In a 9 x 13 casserole dish (foil throw away kind works well) or baking pan Layer ingredients as follows:

1/3 of the dressing
1/2 of the chicken cubes
1/2 of the veggies
1 can of well mixed soup/broth combo Mushroom poured over this layer (soup is best mixed as you are about to put it in unless you have enough extra bowls to mix up the two different cans)

Then

1/3 dressing
remainder of chicken
remainder of veggies
1 can of well mixed soup/broth combo Cream of Chicken poured over this layer

Put remainder of dressing over this, cover with foil and bake in oven at 350*for 30 minutes
Then remove foil (and optionally use some spray butter on top) and bake uncovered for another 30 minutes.

Serve and Enjoy!
