I have 3 different kinds of recipes (well... 7, but only because I sometimes add cinnamon and use margarine instead of butter). This is basically for college students/bachelors who wake up with a hangover and say "I want me some pancakes." Not everyone always has eggs in stock, nor do they always have milk (that isn't past the expiry date). Here ya go.
Regular
1+1/2 cup flour 3+1/2 tsp baking powder 1 tsp salt 1 tbsp sugar 1+1/4 cup milk 1 egg 3 tbsp butter, melted
Optional: 2 tsp cinnamon 3 tbsp margarine, melted (instead of the butter!)
No Milk
1 cup flour 1 tbsp sugar 2 tsp baking powder 1/4 tsp salt 1 beaten egg 1 cup water 1 tbsp oil
Optional: 2 tsp cinnamon
No Egg
1 cup flour 1 tsp sugar 1 tsp cinnamon 2 tsp baking powder 1 cup milk 1 tbsp oil 1 tbsp water 1 tsp vanilla 2 tbsp butter
Optional: use margarine instead of butter
If you have all the ingredients ready on the counter-top, it should only take about 5 minutes to measure and mix it all up. Breakfast in under 10 minutes.

Get water, Add mix from bag, cook

I hate those pancake mixes... They taste so artificial.
However, Gavin, post up a French Toast recipe. I have a couple eggs I need to use up fast.
